The 2024 Les Vignes d'Olivier "Déferlante Rouge" is organic and biodynamic Carignan, Syrah, Grenache, and Merlot co-fermented with white varieties from 30-to-40-year-old vines on clay-limestone in Argelliers, Hérault — a village ten minutes from La Grange des Pères and Montcalmes, cool nights, moderate yields, minimal sulfur, unfined, unfiltered. Olivier Cohen sold wine before he made it — working natural wine bars in Nice, then apprenticing with Antoine Arena in Corsica, Domaine Valette in the Mâcon, and finally Thierry Allemand in Cornas — before coming home to the Languedoc in 2013 to build something of his own. Serve it cold and don't overthink it.
