Ripe citrus, green apple, mineral, and a dense textured finish with honey undertones — fleshy and concentrated for village Chablis, with five years of age adding complexity. 100% Chardonnay from 20-60 year old vines between Préhy and Courgis on limestone and clay. 14-20 months on fine lees, entirely in stainless steel. Indigenous yeast. Organic practices, hand-harvested, no weedkillers or chemical fertilizers. 2020 yields were about 40% below normal across the domaine. Estimated 2,000-3,000 cases produced. Same domaine, same story — Stéphane built it, Virginie and Coco carry it, daughter Nell joined in 2020. The extended lees aging is what separates this from most village Chablis — where others are sharp and steely, this is sensual and deep while still mineral.
