Citrus, orchard fruit, wet stones, salty minerality, and a long precise finish — high-toned, layered, and deep. 100% Chardonnay from just under 2 hectares on a south-facing Kimmeridgian limestone slope on the western side of the Serein. Vinified in roughly 30% used oak and stainless steel, extended lees aging up to nearly two years. Sustainably farmed, organic practices. Estimated 1,000 cases produced. The domaine's Forêts parcels sit between Raveneau and Dauvissat — that's the neighborhood. Virginie has said in recent years she gives Forêts a slight preference over Vaillons, and the wine shows why. Comparable to Grand Cru in the best vintages. Same story: Stéphane built it, died suddenly in 2016 at 47, Virginie and cellar master Coco kept it going, daughter Nell joined in 2020. The wines are sensual and deep where a lot of Chablis is sharp and steely — Stéphane picked late for ripeness, and Virginie has maintained that philosophy.
