The 2021 vintage in the Cote de Beaune was small and cool, and Saint-Aubin was one of its sweet spots for white wine. Bachelet's Les Champlots is bright and chiseled this year, with citrus, green apple and a salty mineral finish. It is the most classic, old-school bottle of the three vintages we brought back. Oysters, crudo or goat cheese will let it shine.
