Jean-Marie Rimbert is a self-described paysan — a peasant farmer — who left Provence nearly 25 years ago, fell in love with the schist-laden hillsides of Berlou in Saint-Chinian, and never looked back. This is 100% Colombard, zesty and bright with tart green apple, lime zest, white flowers, and a salty mineral streak that lives up to its name — "On the Beach." Fermented in stainless steel at controlled temperatures and bottled the following spring to lock in all that freshness, it's pure aperitif energy. Crack it open with raw oysters, ceviche, a pile of crunchy greens, or just a lawn chair and some sunshine.
