Chiseled, luminous, and bone dry — brioche, lemon curd, white peach, and crisp pear on the nose, then a plush yet tense palate of white stone fruit with vibrant driving freshness underneath, a chalky mineral core, and a finish of oyster-shell salinity that runs clean and long. The NV Champagne Chavost "Paradoxe" is a zero dosage, no sulfur added blend of Chardonnay and Pinot Meunier across five consecutive vintages (2019–2023) from Chavot-Courcourt south of Épernay — each year contributing something different: chalk for tension, ripe fruit for roundness, freshness for momentum — disgorged 2026. Chavost has operated as a small cooperative since 1946; in 2019 young chef de cave Fabian Daviaux arrived and quietly changed everything — converting a dedicated portion of the 5.5 hectares to organic farming and making zero-addition Champagne that tastes nothing like cooperative wine is supposed to taste. The paradox is right there in the name: a cooperative making grower-quality Champagne, without sulfur, from five vintages at once. It works.
