The 2025 Koppitsch "Homok" is certified biodynamic 40% Grüner Veltliner, 40% Weissburgunder, and 20% Sauvignon Blanc from a flat, windswept 1.74-hectare plot at the edge of the Neusiedl marshes — whole bunches co-fermented in stainless steel, acacia barrels, and fiberglass tank, six months on gross lees, zero sulfur added, unfined, unfiltered. "Homok" means sand in Hungarian — a nod to the ancient Danube river soils and the Hungarian cultural history that runs through this corner of Austria — and the wine tastes exactly like the word sounds: light, immediate, and completely unpretentious. Give the bottle a shake to wake up the lees, pour it cold, and don't overthink it.
