Petit Chablis, on Portlandien limestone, and Chablis, on Kimmeridgian soils, are not the region’s most starry appellations. Thomas Ventoura works his vines organically and ages the wines for 10 months on the fine lees in stainless steel tanks, giving them additional depth of flavor and textural richness that exceeds the norm for the region. In a world of ever-inflating prices for Burgundy, the Brousseau wines are a consistent and affordable source of beautifully classic Chablis.
