White flowers, pear, green apple, pounded stones, and a broad, creamy minerality with vibrant acidity — cloudy straw in the glass, depth and complexity you're not supposed to find in Melon de Bourgogne. 100% Melon from 30-50 year old vines on schist near Nantes, hand-harvested, slow-pressed over 18 hours, spontaneous fermentation, aged on lees in stainless steel. No additions whatsoever — one of the only vignerons in all of Muscadet producing 100% natural wine. Organically farmed. Estimated 3,000-5,000 cases produced.
