Fewer than 125 cases made. Austere and precise — saline, mineral, and tightly wound, with white-grey marl giving Les Pargues a more restrained, architectural character than any other village Chablis on the floor. Organically farmed with biodynamic practices on 0.40 hectares of 30-year-old southeast-facing vines, wild fermented in tank, twelve months in seasoned barrel, unfined, unfiltered — mentored by Vincent Dauvissat, which tells you everything about where the compass points. Édouard and Eleni met during the 2010 harvest in New Zealand, came home to Chablis with a handful of parcels and a clear point of view, and have since inherited grand cru and premier cru holdings that make them one of the appellation's most important addresses — this village wine is where it all started.
