Certified organic since 2014, whole-cluster pressed, fermented in French oak with maximum 30% new, bottled later than any other premier cru in the cellar after 18–20 months on lees — Jasper Morris calls this his favorite white wine in the cellar, ahead even of the Bâtard-Montrachet.
The Paquelin family kept a vigneron's diary through the French Revolution; that bloodline eventually became Gagnard, then Caroline Lestimé, now her sons Nicolas and Philippe — six generations tending the same pebbly ground above Chassagne. Cellar to 2030 and open it on a night that deserves it.
