Cherry, wet forest floor, licorice, cumin, and black currant — medium to full-bodied with light tannins, real structure, and a savory, earthy finish that has nothing to do with Napa. 100% Cabernet Sauvignon from 30-year-old organically farmed vines at Forchini Vineyard. Native yeast fermented, aged in neutral French oak, unfined, unfiltered, minimal sulfur. Estimated 200-400 cases produced. "Poco a Poco" means "little by little" — winemaker Luke Bass grew up on his family's Demeter-certified biodynamic Porter-Bass estate in western Russian River Valley and trained under Ted Lemon at Littorai. He picks early to preserve acidity and minerality, and he and his mother Susan do everything themselves. Not remotely a California Cab stereotype.
