Pear, citrus, toasted almond, bread crust, and a long saline finish — rich, creamy, and textured with serious depth. 100% Chardonnay from a single one-hectare parcel in Beaunay, blended with perpetual reserve wines stretching back to 2015. Fermented in small oak barrels with native yeast. Certified organic. Under 300 cases produced. This was Maxime Oudiette’s debut wine, launched in November 2020. Where Les Caourdets is taut, vertical, and spiced from its iron-streaked limestone, Les Gras d’Huile is broader and more generous — heavier clay soils giving it flesh and amplitude. Same four hectares, same quiet village behind the Côte des Blancs, same IT-guy-turned-winemaker who trained with Selosse and built everything from scratch. Two parcels, two completely different voices.
