Mineral, stone fruit, orange blossom, and a concentrated wave of flavor with no fat — broad, intense, salivating. 100% Chardonnay from parcels in Montmains, Vieux Moulot, and Butteaux on the left bank of the Serein. Blue clay and clay-limestone loaded with marine fossils. Entirely stainless steel — no oak at all on this cuvée. Organic practices, hand-harvested, no weedkillers or chemical fertilizers, full soil tillage. 2020 yields were just 32 hl/ha, about 40% below normal. Estimated 400-600 cases produced. Where the Forêts is high-toned and powerful with a touch of oak, Montmains is broader, more generous, all mineral width and texture from steel alone. Stéphane's inspirations were Dauvissat and Didier Dagueneau — the latter inspired the domaine's distinctive label design. Same story, same family, same continuation under Virginie and Coco.
