Chateau d'Oupia is the Iche family estate in the village of Oupia, up in the hills of the Minervois, and Les Heretiques is their old-vine Carignan cuvee, named for the Cathar heretics who once took refuge in this country. It is a ripe, generous red, all black cherry, plum and wild herbs, with the fruit kept front and center and no new oak in the way. The Carignan vines run from thirty to a hundred years old, which is why a simple country wine drinks with this much depth. Open it next to roast chicken, sausages off the grill, or a pork chop with rosemary.
