The Defaix family's principal holding—8 hectares of certified organic vines on Chablis's Left Bank, known for high-toned, airy style with abundant chalky minerality. Flinty nose, tense and streamlined palate, greengage fruit finish. The 2024 shows excellent balance: ripe yet dry and mineral. This could be Chablis's excellent future in a changing climate.
