Around 400 cases made, depending on the vintage. Precise, silky, and very Burgundian!
The 2023 Tissot "Sous La Tour" is Demeter-certified biodynamic Pinot Noir from a single south-facing parcel directly below the medieval watchtower of Montigny-lès-Arsures on blue Liassic marl — the oldest and most mineral-rich soils in the estate, harvested by hand, spontaneous fermentation, 12 months in old Burgundian barrels, no fining, no filtration, minimal sulfur.
Stéphane Tissot began making single-parcel wines in 1997 because he believed the Jura's geological diversity demanded it — "Sous La Tour" was among the first, and remains the most consistently compelling red in the portfolio.
