Native yeast, aged in neutral oak, no sulfur during harvest or vinification, minimal at bottling. Gravity-fed cellar. Organic since 2005. Estimated 500-550 cases produced. Alice and Olivier are both Dijon-trained enologists who met at a large Chablis estate, looked at what industrial Chablis had become, and walked the other direction. They started with three plots in 1989, went full-time in 1995, and bought this Premier Cru parcel in 2017. Their négociant project Les Vendangeurs Masqués sources organic fruit from friends like Eric Pfifferling at Gramenon and Eric Texier. Same vineyard as the Lavantureux Vau de Vey you already carry — completely different philosophy.
