2018 Vincent Dauvissat Chablis

Six years in bottle and still coiled. Vincent compared the 2018 balance to 1959. Estimated 1,500-2,000 cases produced. This is one of the two or three greatest domaines in all of Chablis — Dauvissat and Raveneau are the names that end every argument. Vincent's Petit Chablis comes from a plot above Grand Cru Les Clos with full south exposure. His village Chablis transcends the appellation. His Premier Cru La Forest and Grand Cru Les Clos are among the finest white wines made anywhere. The secret is the farming and the patience — biodynamic practices since the early 2000s, horses in the vineyards, and a refusal to release anything before it's ready.
