Julie and Toby Bainbridge are a British-American couple making natural wine in Anjou, in the western Loire. Les Jongleurs is their Chenin Blanc, blended from two plots in the Coteaux du Layon, one on sand and one on quartz, picked the same day to balance ripeness and acidity. It ferments and rests in concrete, goes into bottle unfined and unfiltered under a crown cap with no added sulfur, and lands at a refreshing 11.5 percent alcohol. Pear, chamomile and crushed stone make it a natural with oysters or a young goat cheese.
