Valentin Montanet helms his family's organically farmed estate near Vézelay in northern Burgundy, crafting terroir-driven wines that channel simpler times with lower alcohol and minimal intervention. This Bourgogne Blanc comes from 25-year-old Chardonnay vines (with 2% Chardonnay Musqué) in limestone-rich northern Mâconnais. Crisp and crunchy with lime blossom, green apple, gooseberry, and bright citrus on the juicy palate. The steely, mineral-driven finish shows chalky, saline notes. Pair with smoked salmon canapés, gougères, or roasted poultry.
