The 2023 Pavelot Savigny-lès-Beaune Blanc is a Chardonnay-dominant blend with a touch of Pinot Blanc, drawn from two parcels: Les Planchots, with 55-year-old vines on deep sandy soils, and Les Vermots, younger vines on hillside limestone. Organically farmed, 12 months in 25% new oak. White Burgundy from a house that built its reputation entirely on red — and one more reason to pay attention to Savigny.
