Amaury Beaufort grew up in Champagne among the vines and working in the cellar with his father. He farms only one hectare of vines in the Aube in Champagne which he calls “Le Jardinot,” and does the entirety of the labor by himself. It is important to Amaury that he is fully in control of every part of the process from vineyard to bottle — he treats the vineyards like his own garden.
The natural world is allowed to intermingle with the vines and the vineyards have been untouched by agricultural chemicals since 1969.
