Few sake stories are as captivating as Hakkaisan's Yukimuro. Located in Uonuma, Niigata — one of Japan's snowiest regions — this ancient snow storehouse keeps sake at a stable 3°C year-round using nothing but the natural cold of packed snow, without a single watt of electricity. After three years of undisturbed maturation, the transformation is remarkable.
The nose offers melon, green apple, powdered sugar, citrus, and Asian pear, while the palate is smooth, round, and viscous — layered with nougat, pear confit, honeydew, and apricot tones. Bottled undiluted as a genshu at 17%, the finish remains crisp and cleansing despite the bold, full body — ideal for food pairing.
Pairs beautifully with Mediterranean seafood, washed rind cheese, or dry-aged beef short ribs.
