Smoky, layered — raspberry, sour cherry, wild herbs, and an iron-laced minerality from the red soils of Saulheim. 30-35 year old vines aged two years in century-old inherited Stückfass barrels. Farmed without herbicides, minimal intervention in the cellar. Max took over his family estate and went all-in on natural winemaking; his partner Marika, an Estonian sommelier, showed up as a harvest intern and never left. They place a wooden cat statue on their best barrel each vintage. Pair with roasted duck or mushroom pasta.
