2021 Alice Beaufort Le Petit Beaufort

The 2021 Alice Beaufort "Le Petit Beaufort" is a biodynamically farmed, hand-disgorged sparkling Chardonnay made just outside the official Champagne appellation near the Aube — all the pedigree, none of the AOC. Balanced and light on its feet, with white peach, white flowers, and a whisper of brioche, it carries a striking near-copper hue despite being 100% Chardonnay — the result of 30 months in barrel, two more years on the lees, zero dosage, and zero shortcuts. A joint project between Alice and Quentin Beaufort, carrying forward a family legacy of organic farming that dates back to 1971. Pair with oysters, raw shellfish, or aged cheese — and drink it like the special occasion it is.
