Vardisperi is a rare pink-skinned mutation of Rkatsiteli that was nearly extinct before Pheasant's Tears helped revive it. Hand-harvested, three weeks skin maceration, fermented and aged in buried qvevri clay vessels — some up to 200 years old. Organically farmed, no fining, no filtering, near-zero sulfur. Founded by John Wurdeman, an American painter who came to Georgia to record folk songs and never left. Pair with grilled lamb or aged cheese
