Blackberry, briar, white pepper, red cherry, and raspberry — intense and surprisingly racy, with a crystalline limestone undercurrent, silky tannins, and a finish that goes on for a full minute. The 2023 Pavelot "La Dominode" is organically farmed Pinot Noir from 2.22 hectares on an east-facing slope of sand and clay in Savigny-lès-Beaune — the flagship premier cru of the domaine, with 45% of vines planted in the 1930s, 30% whole cluster, 12 months in 30% new oak. "La Dominode" takes its name from the Latin Dominus — this vineyard once belonged to the lord of Savigny. The old vines still answer to no one. Cellar to 2030 and beyond.
