Around 400 cases produced annually. The 2023 Jean-Marc & Hugues Pavelot Bourgogne Rouge is organically farmed Pinot Noir from 0.82 hectares split between the crossroads of Savigny-lès-Beaune, Pernand-Vergelesses, and Aloxe-Corton on deep clay soils, plus a slice of stony brown clay-limestone from Mont Battois — destemmed, native yeast, 10–12 months in used barrel. The Pavelot family has been making Savigny since the 1950s; Jean-Marc and Hugues are among the appellation's most trusted names, and even their entry wine carries the DNA of a serious house. The best regional Burgundy on the floor is almost always made by someone with something much more serious upstairs. This is that bottle.
