Christian farms his limestone vineyards by horse and invented his own vine-spacing system to keep grapes shaded from increasingly intense sun. His wines land on the world's best restaurant lists, but he keeps a low profile and lets the bottles do the talking. Pair with roast chicken, winter squash, or Alpine cheese.
