In the past Aix-en-Provence was known for having such searing acid that it was almost undrinkable. With climate change the wineries in the south of France have needed to acidify the wines, the exception is Aix-en-Provence, where they now have the upper hand and the wines are right in the sweet spot.
Mouthwatering, the perfect quenching refreshment all summer long.
