Savart is a savant. He is the third generation to lead this tiny estate in Montagne de Reims. His wines glitter with light, tension, and profound complexity. You can certainly enjoy this sans food, but it is worthy of being served over the course of a nice meal...let's say chicken cutlets with mashed potatoes and gravy and a side of creamed spinach.
This is a rare Blanc de Blanc from an area mostly dedicated to white grapes. It's a northern, cool climate wine—firm acids with low dosage that, in our opinion, allows all the components of the wine to shine.
This is Montrachet-level wine but with bubbles and about $900 less per bottle.
