Mostly Chardonnay with 10% Pinot Noir all from the Cocteau du Sézannais, “solare” is based the idea of a solara method, 70% of the wine is from 2021 and 30% is reserve from 1986! Barrel aging and the reserve wine gives this champagne so much complexity.
