This is the first example of skin macerated Chablis from Athénaïs, and boy is it stunning.
The Béru family has owned the historical Château de Béru domain for 400 years. Laurence Béru and her daughter Athénaïs run the domain today and have invested tremendous efforts to adopt organic farming. Considerable improvements have been made since 2006, noticeably in the organic prevention of diseases, in the trellising, biodynamic practices, and in the soil work.
The Chardonnay juice remains in contact with the skins and aged in amphora yielding this amber-hued Chablis. Apricot, umami, and orange blossom.
A blend of vineyards, approx. 30-year-old vines. 17 days macerating in skin in the open air allowing for a lovely texture and mouthfeel. Still the bones of Chablis but imagined differently. Aged for 12 months in old wood and bottled without sulphur.
