Fermented in small 1.5-ton boxes with native yeast, 10-20% whole cluster, pressed in a wooden basket press, aged 7 months in old French oak. Unfined, unfiltered, minimal sulfur. Four of the five vineyards are certified biodynamic, farmed by their own team; the fifth is organic. Estimated 500-1,000 cases produced. Mikey and Gina Giugni started Scar of the Sea in 2012 — they helped get the SLO Coast AVA officially recognized, California's newest coastal appellation. They live, farm, and make wine within sight of the ocean.
