We are a huge fan of the Sauvignon Blancs of Cheverny for a few reasons: we love underdogs and Cheverny is indeed that in the United States, and for the price they offer an excellent alternative to Sancerre( which is becoming more and more expensive each year and less and less interesting in our humble opinion).
In the 1990's Herve took over from his parents, and like many farms at the time they were loaded with chemicals. Herve, not knowing another way continued the culture but thankfully got hooked up with natural wine pioneers Thierry Puzelat and Marcel Lapierre. Since 2000, Herve has worked without additives minus sulfur at bottling.
