Hervé Souhaut created Domaine Romaneaux-Destezet in 1993. Hervé works 5-hectares of old and ancient vines—between 50 to 100 years old. Every wine is treated whole cluster with carbonic maceration.
La Souteronne is the beaujolais of the northern Rhone, made from 50-80 year old Gamay planted on granite. It does however carry characteristics of Syrah (black fruit, fig paste, smoky herbs, bacon-y tendencies) which separate it from the true Beaujolais of the more northern appellation.
