Envínate (“wine yourself”) is the brainchild of Laura Ramos, Jose Martínez, Roberto Santana and Alfonso Torrente, four friends who met while studying viticulture at the University of Miguel Hernández in Alicante. Benje Bianca is 100% Listán Blanco for 70-100 year old vines from Santiago del Teide, Tenerife, Canary Islands.
The grapes are hand-harvested and fermented with native yeasts and without temperature control, in a mix of old French oak foudre and concrete tank. A portion of the wine macerates with the skins and a portion under flor. It drinks like white burgundy only its immensely more affordable! Pair with the traditional Canary Island staple - Conejo al salmorejo, a delightful garlicky marinated game dish, cooked in white wine and seasoned with cumin, oregano, paprika and thyme.
