Certified organic and Demeter-certified biodynamic, concrete tank fermentation, native yeast, 15–18 months in used barrel, unfined, unfiltered. Passetoutgrain is Burgundy's most ancient red wine tradition — the blending of Pinot and Gamay in the same vat — and almost nobody does it like this anymore. Clothilde Lafarge's great-grandfather planted these vines.
