70-year-old organic vines of Chardonnay from a 0.75 hectare plot in the premier cru of Vaugiraut. Citrus, chalky minerality, and a hint of beeswax creaminess. Complex. Can drink now or age for 10+ years.
Vaugirat is a part of the premier cru of Vogros in the southern edge of Chablis. It differs from the normally fleshier style of Vogros because of its cooler exposure, resulting in a leaner more bracing version. It will certainly put on weight with age and lean itself to heavier dishes but right now it’s a classy pairing with the iconic New York bagel sandwich — smoked salmon, capers, pickled onion and a schmear.
